Crispy French Toast
January is usually the time to kick our healthy eating habits into high gear, but for some reason, we are craving comfort food more than ever. Maybe it's the frigid temps, or an attempt to hang on to the warmth and joy of the holiday season just a little longer. Either way, we couldn't resist sharing an indulgent brunch classic for today's #TastyTuesday.
This french toast recipe reminds us of the version from local favorite, Demetri's, in Homewood. The crispy exterior is the perfect contrast to the warm, chewy center. We topped ours with extra cinnamon, powdered sugar and fresh fruit (to make it healthy, of course).
Crispy French Toast - adapted from Genius Kitchen
INGREDIENTS
- 2 eggs, beaten
- 1⁄3 cup whole milk
- 2 Tbsp melted butter
- 1⁄3 cup flour
- 1⁄3 cup sugar
- 1⁄2 teaspoon vanilla
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon cinnamon
- Canola oil
- 10 slices Texas toast thick bread
- 6 tablespoons butter
- 1 cup powdered sugar
- Maple syrup
- Fresh fruit
DIRECTIONS
- Mix together the first eight ingredients (eggs through cinnamon) in a shallow dish; set aside.
- Heat a deep, large skillet over medium-high heat, and fill with enough oil to cover the bottom of the pan (if the oil smokes, your pan is too hot - adjust heat as needed).
- Using tongs, dip bread into the egg mixture, sprinkle with additional cinnamon, then carefully place into the pan. Cook each side for 30-45 seconds, depending on how crispy you want it!
- Let the oil drip off, then transfer to a plate lined with paper towels. Repeat with remaining slices of bread.
- Serve with powdered sugar, additional butter (if desired), maple syrup and fresh fruit.
