White BBQ Loaded Potato
By the end of a busy week, meal prep or planning is the LAST thing on our mind. We are more likely to eat out or order in, in favor of staring into our pantry or fridge while wondering what in the world we can pull together for dinner. Luckily, this simple dish saves the day. There's nothing fancy about a baked potato, but when loaded with a variety of flavorful toppings, it makes a satisfying meal.
Our latest favorite features pulled rotisserie chicken and white BBQ sauce (Jim 'N Nicks and Saw's BBQ are local favorites), along with ingredients you may already have on hand - red onion, Swiss cheese and bacon. We like to brush the potatoes with olive oil and sea salt, then bake directly on the rack for about an hour at 350 degrees. When fully cooked, cut the potatoes in half and top with the chicken, red onion, bacon, and Swiss cheese. Stick the potatoes under the broiler for just a minute or two, long enough to melt the cheese, then drizzle with the white BBQ sauce.
This is an easy weeknight dinner you can count on - just change up the toppings frequently to keep it interesting. Next up for us is shaved roast beef, crumbled Bleu cheese and sauteed mushrooms.
